UCS challenge - Failed to find any operational uplink

UCS 5108 - B200 M5 blades

Google/Cisco aren't making this easy to pin down to make a simple flat network on VLAN 1 to bring the blades up to test install ESXi and ensure all green blinkenlights

I added two interfaces to the LAN uplinks manager and VLAN1 is assigned, but what else is missing to be able to make a minimal server profile happy?

If you are getting the error you mentioned it means you have vNICs that have VLANs configured on them that are not configured on the FI uplinks. You need to add VLANs to the LAN Uplinks to match the VLANs on your vNIC. Otherwise, it means the uplinks are not up/online and configured with the upstream network.
