Most Supported Operating systems will have FC, iSCSI, NFS shared storage support.
It is just a matter of understanding what type NIC/HBAs you have.
For instance if you have a Cisco VIC card, it will support FCOE and the IP based storage (iSCSI, NFS, CIFs).
What kind of connectivity does EMC storage provide (i.e. iSCSI, NFS, FC) ?
What kind of switches are you planning to connect your UCS servers and the EMC storage?
What OS is installed on the UCS servers?
What model of UCS servers (i.e. c240M4, c240m5, etc)?

So what kind of storage is the EMC? FC, iSCSI, NFS ???
Also what kind of NICs, HBAs, VICs, are installed on the server besides the 2 built in 1 Gb Intel LOM ports?
Just noticed you referenced guestVms... VMware supports all the previously mentioned storage protocols (FC, iSCSI, NFS).
If you only have the 1 Gb ethernet ports on the back, then you could connect to your shared storage as NFS or iSCSI, depending on how the EMC storage is configured.
