I use two phones - a 7975G x100 at my desk, and a 7925G x 104 while I am roaming the office.
I have the 7925G setup so I can MONITOR x100 and accept incoming calls.
However I had to delcare a neame, username and password for the 7925G. I made up a name (John Doe) and a password for x104.
Is the John Doe name excluded from dial by name? If not, how do I do so?
Also, is this the best way to accomplish my goal?
Thanks,

Dial by Name looks at Unity Express users (assuming you're using a CUE script to accomplish dial by name). So, as long as you didn't setup a CUE voicemail box, John Doe, extension 104 should be excluded. Another option is to setup a shared line between the two phones so that they are both extension 100.
Hope this helps.

Brandon, Thanks for clearing that up a little bit. Is there a way you can think of to have a user with a CUE mailbox hidden from dial by name (i.e. a CEO or support desk)?

There is no way to do this. The only way would be to go in CUE CLI and misspell his/her name to something wrong.
