Hi,
Is there any way to accept incoming T38 faxing on a SIP trunk and route it to an anologue port on the UC560?

Yes. Under your incoming dialplan (direct dialing) you will point that number to the FXS port (extension) that is connected to your fax machine.
*Important* If your SIP provider does not support T38 you will have issues sending and receiving faxes. One or two pages might go through fine but anything more would end up in a communication error on your fax machine.

Yes, it is a very nomal configuration that actually requires minimumal configuration.

Just point the incoming fax number to an FXS extension number, this will do it
You can do this easily and with little issues in CCA, I don't have CCA to take snap shots for you to assist you, but it I fairly certain you will work your way around it.
If you get stuck contact support and log in a configuration assistance, it will take about 15 minutes on the phone with them to get it done and they can at least test it with you to ensure no issues are found
