Need more information.

Not such a good idea to host your email server on a dynamic IP. If you can, get a static IP from your service provider. You would then have your internal users exit your LAN via this static ip for external traffic. It shouldn't matter where you have your email server then, so long as it was reliably available on the NAT inside.

As far as NAT goes, here is a good starter: http://www.cisco.com/en/US/tech/tk648/tk361/technologies_tech_note09186a0080094e77.shtml, specifically on allowing internal users access ot the Internet: http://www.cisco.com/en/US/tech/tk648/tk361/technologies_tech_note09186a0080094e77.shtml#topic3.

I feel this particular bit, http://www.cisco.com/en/US/tech/tk648/tk361/technologies_tech_note09186a0080094e77.shtml#topic6, with a diagram on allowing the Internet to Access Internal Devices will be of relevance to you.

And finally a stack of configuration examples covering Dynamic Address Allocation and Resolution, Access Lists and many others:

http://www.cisco.com/en/US/tech/tk648/tk361/tech_configuration_examples_list.html.
