The link above shows that users with the Webex mobile app can log in and out of hunt groups in Webex Calling, but I do not see that option anywhere in the mobile app.
How can users log in & out of hunt groups via a device, the desktop app and the mobile app?

I just had the same issue, it turns out you can also use a Call Queue instead of a Hunt Group, that will enable the option to change the Status of an Agent. However, it is worth noting that you will need to train your user base to set themselves Available for the Call Queue to send calls to them. I guess this is why they are not enabling this option to Hunt Groups...

Unfortunately, that feature is available for UCM Calling only. I've asked multiple times to bring it (back) to the Webex app for Calling as well, unfortunately it is not available yet.. No ETA as far as I know..

Because the Webex App can also be used with UCM.
If you check the top of the help page, there is a product indication. It only states UCM, not WxC.
