Hi, Is it possible to deploy one controller for a company that has branches? Deploy it at the head Office provision the AP's then place those AP's at branches but manage them using one controller at the head office? If yes what should be configured?

Yes Possible, as long as you L2/L3 stretched to Branch offices.

If the design is for a centrally managed Cisco controller, then like what the others mentioned is yes. You can run local mode for the headend office and FlexConnect local switching for the remote branch. FlexConnect is the preferred method for the branch unless you have larger circuits where you can tunnel all traffic back to the headend office.

For sure that works. Have a look at the following document:
Be prepared to invest some time in learning the basics of Cisco Controller based wireless. It can be quite complex.
If you want to have it much easier, have a look at the Cisco Meraki APs: https://meraki.cisco.com/products/wireless
