Is it possible to debug multiple clients using the debug client "mac" or is there a different way to do this?

Yes you can debug many MAC addresses 

(WLC) >debug client aaaa.bbbb.cccc aa11.bb11.cc11 aa22.bb22.cc22 aa33.bb33.cc33 aa44.bb44.cc44 ?
<MAC addr6> Enter MAC address
