I have been told that there is a maximum of 30AP's for WDS. is it possible to create more than one "domain" using a single lan for management IP's and multiple wireless vlans (different ip subnets for each vlan in each domain).

30 APs per WDS is just a guideline, not hard limit.
Each subnet can only have one WDS. However, you can have multiple WDSes with one per vlan.

But how can the WLSE collect data from more than one WDS ? I can only set the WDS credential, without to specify more than one...
Have you any suggest ?

What I have been told by TAC is that the WLSE will treat each WDS separately; i.e. you will have two separate managed wireless domains showing up. Radio-management/self-healing/fast-roaming, etc, will not work across the separate WDS domains.

Could you please elaborate on the configuration of two seperate WDS's? How can I configure 2 or more WDS's on one VLAN?

Only one WDS AP per VLAN.
