Hi,
Need a clarification whether we will face any compatibility / connectivity issues while using wifi6 adapter in windows machine while connecting to 2700 and 2800 AP's.

No, there are no issues.
NOTE: Make sure to update the firmware of the AX200.

Note that 2700 and 2800 APs are not Wi-Fi 6 capable!
But you do need to update drivers for some Intel adapters before they'll work at all with any Wi-Fi 6 (802.11ax) capable AP even though the adapter itself doesn't support 802.11ax.

2700 and 2800 is WIFI5 compatible only. if you need wifi6 you better go for 9100 series AP. despite, your windows adapter should be cross compatible with 80.11a protocol. please check the widows card manufacturer technical document.
good luck ! Hadnet

Question from the OPs is if the 2700/2800 are compatible with WiFi 6 (802.11ax) in which I answered yes.
Had the OPs' question be if the 2700/2800 are 802.11ax capable, my answer would be no.
