I am planning to install 20 - 30 IW3702 access points. Reading through the installation guide it refers to shielded cable. My plan was to use CAT6A unshielded Twisted Pair (UTP) feeding from my network switch out to the APs. Is this an issue, will the AP work using an unshielded cable?

It will work for sure.
Since this is industrial grade AP, typically it is assumed you install these AP in an environment with EM interference (with duct/cabling/etc). So it is suggested to use shielded cabling to avoid those EM interference.
So assess the environment you install these IW3702 & then decide
