You can use site survey or you can use a tool to calculate to use. Site survey tool like Airmagnet and Ekahau can be ordered with a Design module and allows you to load the build draw.
I am considering that we are talking about Omni antennas for simplicity. The environment looks small and simple.
A good information to get with your client is how many people he intends to put there and even better which kind of service he intends to run on the network.
If you can't buy a tool for that, try to show him the antenna propagation pattern and explain him that for small areas the amount of AP you are proposing is enough.

The answer to this question is 100. The AP you've quoted is a 3702E and this particular model requires an antenna. Without an antenna you can put 1000 APs and you won't get any wireless coverage.
If you want this done right, get a wireless site survey done. Otherwise, own up to the consequence if it doesn't work.
