Is there a setting in Enterprise Chat and Email for Auto Acknowledgements to be sent more than once to the same sender per day? We have ECE version 11.6.ECE, UCCE

No. Auto Acks are configured in the workflow. It'll work the way you set it up. What seems to be your issue?

The issue is that we (ECE inbox) might receive more than one email from the same business partner or client in a given day. We want an auto acknowledgement reply to be sent for every email received; even if the sender already received an auto ack reply from an earlier email. It seems that only one auto ack is sent per sender email address per day. A client emails us the first time, they receive an auto ack. The client emails us a second time from the same address, but does not receive an auto ack. How can I change this?

Could you please check below setting is available in admin console.
Auto Response Number and Auto Response Time.
