In enhanced and premium versions, the agent can initiate a recording BUT is this the whole of that conversation or from when the agent initiates the recording?

It begins recording when the supervisor or agent presses Record; it is not retroactive.
If you need this feature you can look at Quality Management or a third-party recording product.
