Hello team,
is it possible to upgrade directly from ucce 10.5 to 12.5 (or 12.0) using Technology Refresh upgrades or should we pass by version 11.0?

Per the upgrade guide, you can't. Keep in mind that if you do try it, it may work, but won't be supported by Cisco if you run into an issue, not to mention will be flagged when you go through the A2Q process.
"You can upgrade from Unified CCE Release 11.0(x), 11.5(x), and 11.6(x) to Release 12.0(1) by using one of the two methods"
