I have the Cisco 7841 IP phones. A few of our staff are changing workstations and I cannot figure out how to log a user out and log another one in permanently at a workstation.

The answer depends on the call control platform the phone is registered to. If Webex Calling multi-tenant just delete it in Control Hub and then assign it to the new user by activation code or MAC address.

I'm using Bell Total Connect web portal - can you explain this to me like I'm 5 - These phones are totally defeating me

You will need to reach out to Bell for support. No idea what their admin UI looks like.

You cannot do that from the IP Phone itself, you need to change it from your system that used to manage this IP Phones endpoint.
So as @Jonathan Schulenberg mentioned you need to reach our the Bell support.
