We have a user that has a working 8841localy in the office. The user took that phone home with her to work from home. The phone is now sitting a connecting screen. Typically the 8841 should ask for an activation code, we enter our domain and it loads the configs. We have an expressway and the remote phones connect through a VPN. How can we get to the activations code menu?

Have a look at this guide for how to reset the service mode on the phone.
You also need to create a activation code on the device configuration in CUCM, if not done already.
