We have a site who does not have an MRGL configured for VM ports (either directly or through a device pool). They have a few dozen transcoders, some of which that are not added to any MRG. I believe that remote phones are using the default transcoder as a result to convert to G.711 required by unity.
What are some good traces I can use to figure out which transcoders are invoked?

You can either use the following command on the gateways hosting the transcoders
show sccp connection
OR you can collect detailed callmanager service traces from cucm using RTMT and it can be checked there. Basically you can search for the transcoder name in the traces if that is the only thing you are looking for, since each call in the trace can have thousands of lines of data with all the signaling and other details.
