we have unity connection 8.5 cluster in production running on mcs 7845 server.
we are planning to update the dns on the servers,
if we update the dns will it bring the license to grace period, and after the dns update reboot required ?
what's the exact procedure.

Hi Shiv,
For 8.x version on MCS the licensing will not be impacted, the details are listed here

It affects virtual machines only - " When Unity Connection is installed on a virtual machine, changing the primary DNS server changes the calculated value of the license MAC and invalidates the Unity Connection license."

I don't see cisco suggest server reboot in the doc.

That's right, it's not mandatory as suggested by Deepak.

Adding to what Manish said, adding the DNS does not require a reboot but as a best practice you should go for it. In case, if you will add domain name as well then the system will automatically reboot.
