I would like to collect traces from particular phones, could you please let me know how...

Browse the IP address of the phone and get to the console logs there.

Chris is correct. One thing to add is make sure Web Access is enabled on the phone configuration page in call manager or else the page won't show up. If you want to collect traces from call manager (there will be a ton more data here, maybe too much for what you are looking for), here's how to do it,
