I've got a complaint about conferencing quality affecting everyone in the conference when only one conferencee has a bad connection.
How can I go about solving that problem?

Mute or eject (depending on the bridge) that participant.

How do I do that? I'm using hardware conferencing off of a 2800 series voice gateway (NM-HDV2). I have both meet-me and ad-hoc available to users. How does one mute one member of a conference?

The only floor control for the ISR-based SCCP bridges is eject. The conference initiator can do this through the ConfList soft key. If you want additional options such as mute you will need to look at WebEx audio or MeetingPlace.

Try replacing dsp's with spare ones. Also are the meetings internal or external? Maybe you have a bad isdn channel if external or qos not configured right if over wan or not enough bandwidth if a lot of participants are from the same site
