I have some questions. At 11:46 he selects the file Bootable_UCSInstall_UCOS_11.0.1.20000-2.sgn.iso. But at 12:20 the file displayed is not that, but UCSInstall_UCOS_11.0.1.20000-2.sgn.iso.
1.- Why is this happening?
2.- Shouldn't the bootable be shown at 12:20 instead of non-bootable?
3.- Does CUCM recognize both bootable and non-bootable with the same name Bootable_UCSInstall_UCOS_11.0.1.20000-2.sgn.iso under Software Installation/software section?
4.- Do I really need to download both files from Cisco download or just bootable?

Hi Victor,
Bootable images are for fresh installs, the ones without the 'bootable' word are used for upgrades. For upgrades you do not need the bootable images.

Well as Manish correctly stated that you will always require non bootable ISO for the upgrade procedure. What Jaime had done in the video was I believe by mistake at 11:46 which he should definitely had corrected but it looks like he might have missed to record that part. You will only require the non bootable image for upgrade.

No, there's no mistake, you're supposed to order the "upgrade" files via PUT (but you don't get the same file that's posted on cisco.com, you get bootable media), the files themselves tell you that:
11.0(1a)su2 US Export Restricted - full encryption (non-bootable) - For upgrade from 11x. Upgrades from 6.1(4)+, 7.1(3)+,8.0(1)+, 9.0(1)+,10.0(1)+ need to be requested via PUT (www.cisco.com/upgrade) or purchased for required license
UCSInstall_UCOS_11.0.1.22900-14.sgn.iso
Using bootable files for upgrade is perfectly valid, as the video shows, they will be recognized as valid images, and will be used for the upgrade.
