We have a few 7962G phones that have gone bad and would like to upgrade to the 8841 phone which only allows SIP based protocol. Is there any issues installing these phones on the CME when it is already using SCCP as protocol for existing phones. Router is Cisco 2921 with SRE710 and CME has been upgraded to 10.5. Thank you

No, you have always had the option to use SCCP and SIP phones in CME, the CME config guide covers both.

Absolutely Yes, you can use both i.e. SIP and SCCP phones in CME simultaneously. The configuration is indeed different for the phones running on SIP and SCCP but they work independent of each other and no issues at all whatsoever in configuring them both at the same time on CME.
It is meant to be that way only.
