What are my options for a voice as it pertains to software? I need to work with CUCM, Unity, and CCX.

They run on VMware ESX, Workstation, or Fusion. Some have it working on Xen or other x86 hypervisors as well but you'll need an Intel processor; no AMD. http://docwiki.cisco.com/wiki/Unified_Communications_Virtualization

CUCM/Unity comes with a 60 day license, you can request an extension for 6 months from licensing beyond which you will have to rebuild the server. CCX will have a temporary license in the ISO, you will have to browse the ISO and find the license.

These guys are spot on.  I ended up building my own box on an intel i5 with 8GB of RAM and a 1TB HDD then running ESXi.  Runs CUCM and Unity just fine and could run CCX as well but I would probably bump the RAM up a bit just for more expansion in case you wanted to go with CUPS and maybe an AD server.

The temporary 60 day licenses are useful enough but just be prepared to reinstall unless you get the extension or have the money laying around for a real license.

I have a C220 Server with 48GB of ram and 2 x Intell procs. hardware is not a concern just getting software and licensing.

If you're with a partner you can buy the NFR kit.
