Hello,
I have a CISCO IP PHONE 7940 Series. Is it possible to record your Cisco IP Phone conversations onto your PC? If yes, can you please provide the configuration?

That can only be done, or arranged for, by the system administrator, are you ?

Just to note that both techniques indicated below require configuration by system administrator, hence my first answer.

One option is, using a snifer (wireshark), to complete this task.
+Put the port that the 7940 is hooked up in mirror to other port in the switch.
+Connect your PC running wireshark in this port (mirroring the ip phone)
+Capture the packets, select the UDP stream and save as audio.

NOTE:
Only audio with g.711 codec can be decoded with procedure.

Just enable SPAN to PC Port and Voice VLAN Access on the Device Configuration page of that phone. After that Wireshark will do the trick. Of course this answer doesn't account for any legal compliance/disclosure requirements that you may be subject to. Always check with your legal counsel before recording calls, or using Wireshark for that matter.
