currently I'm working with the customer has Cisco IP telephony solution and he needs a solution mainly for a VOIP security.

Assuming your customer is running CUCM then a good place to start would be the Security chapter of the

Voip security is very vague term, what are you looking for exactly?

Have you had a chance to review CUCM Security Guide, here is one for latest version, there is similar doc for each release of CUCM:
