While troubleshooting high cpu due to interrupts on platforms like 6500 or 7600 we can capture the packets getting punted to the CPU using netdr or on 4500 I think we can even use monitor session.
But is there a way where we can capture/sniff packets reaching the CPU on a 7206vxr with NPE-G2?

I've got news for you, all and any packet is handled by CPU on the 7200, with all types of NPE.
So whatever standard IOPS capture or debug command will work.

Is it?? then why ip cef.... is it so that all packets are process switched on npe-g2?

On a software based router like NPE-G2, the CPU processes all packets in IP CEF mode, except the ones destined to itself, and few more special ones.
In other words, there is no process-switching of packets.

The interrupts on NPE-G2 indicate that the packets are getting process switched... as per my understanding... correct me if wrong... !
I want to know a way where I can sniff these packets and know the source of the traffic that is reaching the CPU.

Best way to capture traffic is an external device, because other means might interfer with normal router operation.
