We are using c3750-24fs-s switches on our LAN. It is our understanding that these switches are end of life and the c375v2-24fs-s is the replacement, and our assett team ordered V2 with the last shipment.
Now we see thered is an issue. The 3750s deployed are 24 port MT-RJ switches. It appears that the V2 switch is a SFP based switch (GLC-FE-100FX) making them a LC connection. Is there a MT-RJ version of the SFP for this switch?
No one wants to here that we will need to recable and it trickles down for documentation if we ever replace an old 3750 with a V2
Any insight would be appreciated.

No. The only available version is as you mentioned.

No but you can easily re-terminate your fibre optic patch cord to LC instead of MTRJ.
MTRJ is a dying form factor. This is why a lot of network equipment manufacturers don't use that anymore.
