Hi,
I haven't work on any Nexus devices. But am keen to study them.
Are there any simulators available for Nexus 2K, 3K, 5K and 7K...?

You mean like the equivalent of GNS 3 for IOS? The answer is no, not for the general public.
Your best bet is to rent a Nexus rack from one of the major CCIE trainers like INE. This can be done relatively cheaply.

For CEF, there is no direct comamnd on nexus 7k switches.
However, following commands provide similar information (some of them may be hidden and will
not auto complete).
sh routing hash src_addr dst_addr
show system internal forwarding route addr module ingress_mod detail

There aren't any at the moment. I have heard that Cisco has an internal one that is proprietary and not available to the public. Our only hope is to wait for the release of Cisco's VIRL aka Cisco Modeling Labs and hope that an NX-OS emulator will be included. However, when I was checking it out at this year's Cisco Live the current version did not have one.
