Would there be any benefits to using RIPv2 instead of using EIGRP. If so what would they be?

If you only have those 2 choices on the design, the first benefit of using RIPv2 over EIGRP is that you aren't tied to a Cisco device since EIGRP is Cisco proprietary.

Another possible benefit of using RIPv2 vs. EIGRP, on some Cisco platforms, EIGRP and/or OSPF require a more expensive feature license.
