What is the routing performance of WS-C3560-8PC-S? Can I get 100Mbps out of the interface?

You are right, but you can take the information provided on this page:
http://www.cisco.com/en/US/products/hw/switches/ps5528/prod_models_comparison.html
and come up with the numbers from the previous page.
Based on the page above, the 8port switch produces 2.7 Mpps which based on my calculations taken from the 2 models listed in the initial link rates about 3.6Gbps..

I believe catalyst 3560 switches are going to reach End-of-life very soon.

That's incorrect !
The link you've posted is related to the Advanced IP Services feature set, not the hardware itself.

I have read that before. It did not mention any performance about routing. I am wondering if routing can have the same performance as swtiching.

See the column L2/L3 ? 3560 indicates L3 so those stats where measure with routing involved.

Depending on which specs you examine, you might be able to obtain full wire rate from all ports (for either L2/L3). If true, answer to your question is yes. If not true, very likely switch's L3 performance is (much) more than 100 Mbps.
PS:
Where the specs conflict:
Table 2 in http://www.cisco.com/en/US/prod/collateral/switches/ps5718/ps5528/product_data_sheet09186a00801f3d7d.html shows, for performance, 32 Gbps forwarding bandwidth (all 3560s?) and 2.7 Mpps (Cisco Catalyst 3560-8PC), but in Edison's first reference, although the 8 port 3560 isn't listed, other 10/100 3560s are noted with less than 32 Gbps.
The Mpps rating, 2.7 Mpp, is what's needed for wire speed, only whether 3.6 Gbps fabric bandwidth is provided is unclear.
