Can Cisco Unity Connection be deployed in a failover Configuration. I am thinking of configuring (2) Cisco Unity Connection Box integrating directly to exchange server for Unified Messaging.

Unity Connection cannot currently be deployed in a failover configuration.
Unity does support failover, however.

What about Cold Standby can this be supported or will it ever be an option?

In unity connection the failover is called High availability which is better than regular Unity(windows based), because it allows both servers to answer calls.
