Does anyone knows if CUCM is compatible with VMware Hardware version 9 on UCS?

What do you mean by VMware hardware version 9?
CUCM is compatible with VMWare as of CUCM version 8.0 and all compatibility information is found here:

Virtual Machine Hardware Version
Our Cisco install was originally on ESXi v5.0 then later upgraded to v5.1. Should we upgrade the hardware version from 8.0 to 9.0? Is there any documentation on hardware versions? The two reference links do not mention hardware versions.

Ok, so Virtual Machine Version is the term Cisco uses for Virtual Machine Hardware Versions. Got it.
