Hi,
Newbie again here,
Why would Prime licensing manager suddenly be in demo mode after 2 years of use?
All licenses, seem to be gone.
Thanks,
Sam

First, in PLM, navigate to License > Fulfillment and see if your existing licenses are there. Even if there is a problem with PLM recognizing the licenses, the licenses themselves that have been installed should be listed.
If there are no licenses there, is it possible that you are logging into a PLM on a server that is not your primary licensing server? (Each CUCM and CUC instance has PLM installed behind the scenes, but only one - your primary licensing server - will have licenses installed.)
You can also view your current licensing (including which server is your primary licensing server) by going into CUCM and navigating to System > Licensing.

I have the same case, the license files exist on the PLM, but it shows "Prime license manager is operating in demo mode"
this occurred after restoring the VM of the CUCM.
how to fix this

When you did your restore, did the virtual MAC address of the CUCM Pub remain the same? The license file is keyed to the MAC address of the Publisher.

The screenshot shows 0 product instances configured, are you sure you're looking at the right PLM?
