Hi, just to confirm, is it a valid design have more than one FC port-channel on the UCS carrying different VSAN?

Yes, you can have separate FC port channels carrying separate VSAN's and it is a good design if you have enough resources for the same. Else, you can even have single FC port channel carrying multiple VSAN's using f port channel trunking as long as your SAN switch supports it.

I assume you will be doing FC end host mode, not FC switch mode.
There is no such feature like disjoint vlan's for FC vsan's. Therefore all the defined VSAN's (per fabric or FI) would appear on both port channels; pruning has to be done on the Northbound FC switch. You will then see error messages on UCS, that some of the vsan's on the trunk are not up !

You can configure Fibre Channel uplink trunking for the named VSANs on each fabric interconnect. If you enable trunking on a fabric interconnect, all named VSANs in a Cisco UCS instance are allowed on all Fibre Channel uplink ports on that fabric interconnect.
