I installed an UCSC-MRAID12G controller and 2 x SSDs in a C220 M4.
Configured the controller, creating a virtual disk, the disks are visible via the option ROM on the console.
When I run the ESXi installer, the disks are not found.
Any information why the disks may not be able to be detected by the installer?

If the virtual drive is created, usually ESXi installer will see it provided the ESXi ISO has correct drivers...
Assuming you have a Cisco UCS customized 7.0U3 image, that should contain the 12Gb SAS raid driver...
If the SSDs are large enough where the VD is greater than 2TB or 4K sector based drives, than you need to make sure you have your boot order set to UEFI, and are booting the virtual KVM mounted ESXi ISO in UEFI mode as well.
