Is there any reason to use less than 54mbps in data rate?

If there is no client using 802.11b (1, 2, 5.5, 11),

Isn't it better to disable everything except the data rate of 54mbps?

I've read several guides, but it disables some of the really low rates.

Why disable only some?

These are not the data rates that you can compare to what your laptop reports to you. For 54 Mbps you are not allowed to be too far away from the AP. If you sit directly below the AP then you could be fine with that. But if you want to have the system working away from the AP then the "typical" setting of keeping 12 Mbps as Mandatory is likely the better choice.

Be very careful with that settings:  Some wireless clients cannot support something that high.
