Instead of continuing to hold, I would like to give callers an option to record a voicemail and have that sent as an attachment to an Email CSQ. Can this be done with the same session or create a new session within the script? I'm unsure of how I would create an email session, attach the voicemaiil and send it to the email CSQ. Any help would be appreciated.

If you have Unity Connection, one option would be to send the call to voicemail that forwards to email. You should be able to forward it with SMTP or Single Inbox.
Here is a post on a workaround you have to put into place to get it to work with singe inbox:

I believe its possible (haven't done it before) through script editor
1. Record the voicemail through IVR and store it is some temp location
2. Create the email, attached the file from temp location and send the email to abc@abc.com
3. Email CSQ should be monitoring and getting the email from abc@abc.com
4. Email routed to agent and able to open the email through CAD
Thanks!
