If I connect computer to a VoIP which connected to a Cisco switch, would I be able to see the computer as s CDP neighbor without running any Cisco UC application on the computer?

I don't think so, since CDP is a Cisco protocol, so only Cisco devices run CDP.
Therefore, the computer cannot send any CDP.
You would see the CDP packets of the Cisco phone only.

Just to understand, if the Cisco UC application running under other user I would see the computer in the CDP neighbor command output?

If the application supports CDP, then probably yes.

CDP is Cisco Propitiatory protocol.

If you install CIPC it would also add the CDP protocol to the computer. So it would show as a CDP neighbour to the device it connects directly with. As CDP is a layer 2 protocol it would only be seen by the connecting neighbour device, anything down stream will not see the CDP traffic.

What do you mean by “If I connect computer to a VoIP”? VoIP is voice over IP, that’s a technology, not a device. So unclear what exactly it is that you ask about.

You know if Cisco Jabber run's CDP?
If yes- it run's under the main process or in a separate process?

Jabber does not run CDP.
