I know the End of Sale notice says CAC is no longer supported for upgrades to UCM 8.0, but does this mean it will no longer work or just that Cisco will no longer provide support for it?

CUCM 8.0 no longer has the back end service that supported Attendant Console so it will not work.
Cisco would point you towards the newish Unified Attendant Consoles which need a separate server and run on Windows

The server-side code and services have been entirely removed.
