I have tried over the years to capture these notes in the
attached doc. Thanks to Gordon for his contributions;
It's not comprehensive but it should have the info you require.

Features and bug fixes, the release notes for any version show the new features added in that version.

Chris, Rob, Ayodeji - All good responses here - Round of (+5) to all dedicated contributors.
Fayiz - Please follow the above good advice. I could not stop myself mentioning one of the most notable feature that simplified and changed the Call Routing in CUCM 7 and above, was the addition of Local Route Groups starting version 7. When you move on from CUCM6 to CUCM7 or above make sure you have a good understanding of Local Route Groups and take full advantage of this feature.

Good Document provided by Rob which gives detail of what all has been introduced in upcoming CUCM versions.
More to add , logical partitioning and Audit log was introduced in CUCM version 7.
