We are planning to upgrade our CUCM from version 6.14 to version 8.0X or 8.X. Which version would you recommend and why? Stability is our main concern.

Go to 8.5, it will be more stable, think of it as a minor upgrade of 8.0. It's not called 8.1 because Cisco wanted to synchronize version numbers between a bunch of products.
Also make sure your other Cisco voice apps are compatible with 8.5.
Edit: note that both latest 8.0 and 8.5 are stable releases
