I would need to migrate existing Call Manager 11.5 and UnityConnection 11.5 to new server running ESXi 7.0 U2. Virtualization guide states both of them only support ESXi up to 6.7 only. However, the new server comes up with ESXi 7.0 U2 and all 6.x would be expired soon next year. It is not feasible to purchase servers running 6.7 and 7.0 to 6.7 downgrade is not possible.
Does anyone has experience on migrating 11.5 application to ESXi 7.0 ?

If it is not specifically listed in the compatibility document(s) it is not supported. It might work well, but (and it's a BIG but) it will not be supported by Cisco. Meaning that if you where to have issues/problems you will NOT get help from TAC. Your best option to be on this version of ESXi is to update to either of these two CM versions, 12.5 SU2+ or 14.0.
