I was able to get it working by API by manually importing both the root and intermediate Let's Encrypt certificate chain first. Then using the API, send the leaf cert only. The leaf doesn't have the "Let's Encrypt" wording (just cn=domain.com)
That video clip doesn't answer the question at all. The default cohost option isn't in the global templates, it's only in personal templates so it can't be globally applied.
