Is it possible to revert back to the previous version with a bridge upgrade?

Sure, if you installed the prior version first and it is present in the inactive partition.

There is no direct upgrade from 6.1.2 to 8.5, you need to be on at least 6.1.4 per the following:
http://www.cisco.com/en/US/docs/voice_ip_comm/cucm/compat/ccmcompmatr1.pdf
So, if you upgrade to 6.1.5 and then 8.5, you will be able to revert back to 6.1.5.
By the way is there a reason you are going to 8.5 and not 9.1 or at least 8.6?

Yes we have 6.1.2 and going to upgrade to 8.5. So I will be able to revert back if upgrade fails?

No reason, just though hardware for 8.5 is cheaper than for 9.1

Hardware is the same, unless your hardware does not allow you to go to version 9.1 and you would need to buy new hardware. If you are already buying new hardware and hopefully virtulizing the servers then the cost would be the same.
