J,
The main difference is:
A higher-resolution, graphical 4-bit grayscale display (320 x 222)
Support for double-byte characters and Unicode text to benefit Extensible Markup Language (XML) application developers
Support for both IEEE standard 802.3af inline power and Cisco inline power
You can view the info here

Hi Jack,
Just to add a note to the good info your received from Marcus. The main difference between the 7940G/7960G and the 7941G/7961G are the "backlit" line keys and upgraded displays that are on the newer 7941G/7961G and not on the 7940G/7960G. We have many of all 4 models deployed in our environment and our users much** prefer the 41G/61G models. Have a look;
The Cisco Unified IP Phone 7961G provides six programmable backlit line/feature buttons (these line keys now change color depending on the status of the call ie: Ringing,Hold,Idle **Very nice feature**) and four interactive soft keys that guide a user through call features and functions, and audio controls for high-quality duplex speakerphone, handset, and headset. A built-in headset port and an integrated Ethernet switch are standard with the Cisco Unified IP Phone 7941G. The phone also features a ***best-of-class large, higher-resolution grayscale pixel-based LCD ***. The display provides features such as date and time, calling party name, calling party number, and digits dialed. The graphic capability of the display allows for the inclusion of higher value, more visibly rich Extensible Markup Language (XML) applications and double-byte languages.

The huge difference, which you cannot see is the additinal memory in the new generation phones which will allow you to run new CM features bundled in CM 6.X. Even though Cisco is still selling 7940/60, look for them to become absolete in the adaptation of CM 6.X. They basically have no more memeory to handle anything more, i.e. recording, intercom, etc.

The other difference is 7960 is much slower than 7961 in restarting from CME router.
R1(config-telephony)#restart all
reset 2 phones 5 seconds, this could take several minutes per phone Starting with 7960 phones
