Is it possible to get the ring duration (i.e. the time the phone was ringing before the call was answered) from the CUCM 5.1 CDR fields?

unfortunately no field holds that info within CRD

A few years have gone past... Now we are on CUCM 11.x. Is there still no "ring duration" field within CDR?

It appears its still not there, check the available parameters in cucm 11.0 here

You can calculate like:
Ring duration = dateTimeConnect - dateTimeOrigination

In the case a call went to UCCX and will be sent to a DN (not an agent), the difference between OrigTime and ConnectTime will show the time until the phone is picked up. Here is such a classic example sending a call from UCCX to a hunt pilot (5000). Ring time is calculated as mentioned above:
CldPty (final, last redir);ring;talk: (HP involved)
1. 8600 (8439,8600);2;8
2. 5000 (5001,5000);13;12 (HP:5000)
The original call went to 8600 (ringing 2 secs before UCCX picked up), CTI port is 8439. Some call treatment for 8 seconds, then calling DN 5000 (Hunt Pilot). The call went to 5001 which is a member of the Line Group. Ring time shows 13 seconds, which is the accumulated time of UCCX ringing 2 secs, 8 secs treatment and 3 seconds before 5001 picked up.
