I might have missed it but AFAIK there is no SU5 for 12.5 released yet. If it would be released you could in most cases use it with CM that is on another version, especially if your within the major release train.

As @Roger Kallberg mentioned Su5 is still not available. Recommended version is 12.5(1)SU4.

Recommendation is to at minimum stay within the same release, aka 12.5, for your entire UC services portfolio. It might work just fine with 12.0, but this is really just speculations.

With CUCM  12.5(1)SU4 recommend CUC is 12.5(1)SU4

You can refer to @Roger Kallberg post about Unity Connection version. But what I have seen so far is higher version of Cisco Unity Connection is always compatible with 2 to 3 lower versions of CUCM. You can always refer compatibility matrix document specifically written for Cisco Unity Connection:
