Is it possible to install an antivirus on cisco cucm, CUC, CCX, IMP?

unfortunately not, there is no such option, yes these are linux redhat boxes, but you dont have root access to install. this is simply not supported by Cisco

Or CentOS for 12.x+, but it's still the same answer.

Our customer raised this question to us as well. I tried to find some reference documentation (i.e. CUCM Security guide), but no luck. Does any exist out there?

The following are not enabled or possible:
onboard agents like anti-virus clients, UPS agents, management agents and so on.
customer-uploadable or externally-uploadable software.
3rd-party applications.

as other friends said, its not possible..
you can do "Security Hardening" on CUCM & other cisco VoiP servers..
google about it, you will find very useful information..
